how to make a bird out of clay?

Find a picture of the bird you want to make doing what you want to show it doing.
Make a rough duplicate of it without a lot of detail and then slowly add more and more detail to it.
Remember that in art…. A is to B, as B is to C.
In other words make it all “flow.”
Don’t make a lot of detail in one place, unless you are going to make the same amount of detail everywhere else.
